Spanish Rice (Rice Cooker)

Ingredients
- 1 Tbsp extra-virgin olive oil
- ½ medium yellow onion, finely chopped
- 1 Tbsp mixed garlic
- 1 ½ cups long-grain white rice
- 2 cups low-sodium chicken broth
- 1 tsp salt
- 1 ¼ tsp Sazón seasoning
- 1 tsp dried oregano
- ¾ tsp ground cumin
- ½ tsp freshly ground black pepper, plus more
- ¼ tsp cayenne pepper
- Fresh cilantro leaves, for serving
Directions
- Use a medium saucepan over medium heat to sweat the onions until soft and translucent. This should take about 3 minutes. Add garlic and cook for about 2 minutes while stirring frequently until softened and fragrant.
- Rince the rice, add to a rice cooker
- Add broth and seasonings to the rice cooker, stir until well-mixed
- Start the rice cooker with the white rice setting
- Once cooked, fluff with a fork or spoon
- Rest for 5–10 minutes before serving
Notes
- Allow your rice to rest. The rice should be allowed to rest and gently steam for 5 to 10 minutes after it’s cooked. Simply cover the pot with a clean kitchen towel, and let it sit before fluffing it with a fork and adding the cilantro.
